Short Answer

It depends on where you're going. In big tourist cities like Beijing, Shanghai, and Xi'an, many young people speak some English, and most signs are in both Chinese and English. Good hotels have English-speaking staff.
If you're heading off the beaten path to smaller towns or rural areas, you'll want to download an offline translation app before you go. Plenty of travelers visit China without speaking any Chinese and still have a great time — people are generally really friendly and helpful if you look lost.

China has changed a lot in recent years. Today:
  • Major tourist cities: subways have English announcements, all major signs include English, and many young people speak basic English
  • Taxis: use Didi (China's version of Uber) — you enter your destination in Chinese on your phone, the driver sees it directly, no talking needed
  • Restaurants: most tourist spots have picture menus, and translation apps can instantly translate menus through your phone camera now
  • Google doesn't work in China — download an offline map before you go (Maps.me works great) and get a VPN if you want to use Google services
Honestly, even if you don't speak any Chinese, you can absolutely have a wonderful trip. Chinese people are generally very welcoming to foreign tourists, and if you look lost, someone will usually try to help you even if they don't speak English.
My top tip: save your hotel address as a photo on your phone so you can show it to taxi drivers. And download Google Translate with the offline Chinese language pack before you go — it works wonders for communicating. You'll be fine.
